Thick-cut Smoked Uncured Jowl Bacon.
Pig jowls (aka cheeks) offer dense meat and a good amount of delicious fat. Bacon made from the jowls has a much higher fat to meat ratio than traditional belly bacon. Mangalitsa pigs have particularly large, fatty jowls which make for exceptionally flavorful jowl bacon. Jowl bacon is our daughter's favorite breakfast food! Jowl bacon is cut thick and works great when you chop and sauté to add to other dishes like pasta or veggies.
