This is a must try!! Since Mangalitsa has been called the "Kobe beef of pork" this will be your cut to compare it to. The collar steak is deep red and marbled with melt in your mouth fat. It is something you normally cant’t find in the store and is very special on our mangalitsa pigs. We let our pigs root for forage which really builds this muscle up in the neck and makes a perfect flavorful dinner.
We like to cook our collar steaks like you would any fine steak. They are great seasoned with salt and pepper than reverse seared, souls vide or grilled just cook to medium rare for a perfect meal. Each package contains 2 steaks.
