Our chicken is a heritage breed raised on pasture and is not like store bought, which is usually injected with a salt solution. We recommend letting our chicken sit in the refrigerator at least 48 hours prior to cooking.  It can benefit from brining in a salt water in the refrigerator while it defrosts for 24-48 hours.
